Strawberry Cheesecake Personal Parfaits

Ingredients:
- 8 oz Whipped Cream Cheese
- 8 oz Instant Vanilla Pudding
- Milk (for instant pudding)
- 2 cups sliced Strawberries (Frozen or Fresh)
- 4 tbsp + 2 tsp Water
- 1/3 cup Sugar
- 1 tsp cornstarch
Directions:
- In a small saucepan, combine sliced strawberries, sugar, and water. Simmer until the strawberries are mushy and a soft syrupy sauce has been formed. Stir occasionally.
- Add a slurry of 1 tsp cornstarch 2 tsp water to the strawberries. Let simmer for a few more minutes until the syrup has thickened.
- In a small bowl, follow the instructions on the Instant Vanilla Pudding.
- Combine the finished pudding with the Whipped Cream Cheese. Fold until well incorporated.
- In small dessert cups, place a layer of Eventful Sweets New York Cheesecake Pieces on the bottom of the cups.
- Place a tablespoon to 1 ½ tablespoons of the instant pudding, cream cheese mixture on top of the Cheesecake Pieces
- Add a layer of strawberry sauce. If you want more consistent clean layers, make sure to get more of the strawberry pieces and only a little of the sauce.
- Garnish with 3-6 more pieces of Eventful Sweets New York Cheesecake Pieces.
- Serve immediately or refrigerate up to three hours in advance of a party or event.
