Ingredients:

  • 2 ¾ cups flour
  • ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup (2 sticks) butter room temperature
  • 1 cup + 2 tbsp granulated sugar
  • 2 tbsp brown sugar (light)
  • 1 large egg or egg replacement
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract

Instructions:

- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.

- In another medium bowl, cream together the butter and granulated sugar (by hand or using a stand mixer) until light and fluffy.

- Beat in the egg until fully combined.

- Add the vanilla and peppermint extracts to the wet ingredients, mixing until incorporated.

- Gradually add the dry ingredients to the wet ingredients, mixing until a thick dough forms.

- Gently fold in the Eventful Sweets Ivory Chips and Crushed Peppermint with a rubber spatula, ensuring even distribution.

- Roll the dough into 1 ½ tablespoon-sized balls and place them on the prepared baking sheets, spacing them about 2 inches apart.

- Bake for 7-9 minutes, or until the edges are lightly golden and the centers are still soft. The cookies will appear slightly puffy but will settle as they cool.

- Let the cookies cool on the baking sheet for 4-5 minutes, then transfer them to a wire rack to cool completely.
