Peppermint Oreo Truffles
Ingredients:
-18 oz Oreos (~36 cookies)
-8 oz cream cheese, at room temperature
-1 cup white chocolate chips or white almond bark
- 2-3 tbsp coconut oil (optional, but this will help thin out the chocolate if needed)
-1/2 cup Crushed Peppermint Topping
Directions:
1. Add Oreos to a food processor or high-speed blender and blend until smooth
2. Add Oreos and room-temperature cream cheese to a large bowl and mix well. I find that this is easiest to do with your hands!
3. Using a cookie scoop or large tablespoon, scoop the dough and roll it into balls. Place them on a baking sheet and refrigerate for 30 minutes.
4. Melt your white chocolate according to the packaging, then drizzle over top of the Oreo balls. Top with the crushed peppermint topping & ENJOY!
