Andes Mints Chocolate Cookies
Perfect Holiday Mint Chocolate Cookies

Ingredients:
- ½ cup butter softened
- ¾ cup light brown sugar
- 1 large egg or egg replacement
- ½ tsp vanilla extract
- ½ tsp mint extract
- 1 ½ cups flour
- ¼ cup cocoa powder
- ¾ tsp baking soda
- ¼ tsp baking powder
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, cream together the softened butter and the light brown sugar.
- Add in egg or egg replacement and both extracts until incorporated.
- In a medium bowl, whisk together flour, salt, cocoa, baking soda, and baking powder.
- Slowly add the dry ingredients to the wet ingredients, mix until combined.
- Fold in the Chopped Andes Mints and Dark Chocolate Chips 4M Mini.
- Make 2” balls with your hands, placing 6 at a time on a lined baking sheet. Leaving 2 inches between each cookie.
- Top the cookie balls with more of the Chopped Andes Mints.
- Bake for 12 minutes for a slightly crispy and chewy cookie. Bake for 10 if you’d prefer a slightly underbaked cooked.
- Let the cookies cool for 5 minutes before transferring to a wire rack.
